The culinary arts have been a passion of mine for years. My career in the industry began at 14, scrubbing dishes, and continued throughout high school as I worked my way through the stations—prep, pantry, sauté, grill, and more. By the time I reached college, I was cooking in high-end restaurants, and it was there that I first discovered the world of well-manicured cutlery. In fine dining, each cook brings their own knives. I began sampling the various knives and was astounded at how unique each blade felt. Damascus steel versus Western steel, the weight, the balance—it was fascinating, and I was hooked.
After a decade in kitchens, life took me in new directions, and I found myself drawn to metalworking. Along the way, I met some incredibly skilled craftspeople who deepened my understanding of the craft. It wasn’t long before I realized I had to find a way to combine my two passions: culinary arts and metalworking. Knives were the natural fit.
As I dove deeper into the world of knives, I quickly saw the flaws in how we take care of them. If I take my knives to the local hardware store, my Damascus steel blade gets sharpened the same way as my Western steel. Plus, I have to drop them off, be without them for a few days, and make a second trip to retrieve them.
Another option is to ship my knives to multiple manufacturers, packing and sending them off to different places, and wait a week or more until I get them back.
